Leafy greens are packed with fibre, vitamins and minerals. But it can be hard to convince plenty of grown ups, let alone the little people in our lives, to eat them every day. Blending spinach into these delicious kiwi and spinach ice lollies is the perfect solution. With protein, fibre, good fats and a whole host of micronutrients, these lollies are wholesome enough to eat for breakfast.
We don't believe in 'sneaking' vegetables into food, so try making these together with your kids. The Focus Skill in this month's SPINACH box is all about blending if you need some extra tips on getting them involved. To sign up for a monthly subscription, click here.
Kiwi & Spinach Ice Lollies Makes 8 - 10
Ingredients:
200g Greek yoghurt
2 good handfuls baby leaf spinach (or a couple of frozen pucks)
1 banana
1/4 medium pineapple, skin removed & diced
1 kiwi, skin removed & sliced
1 tbsp hemp seeds (optional)
Method:
In a blender, combine all the ingredients and blitz til smooth. Pour into lolly moulds and freeze until firm, at least 4 hours. If you're feeling fancy you can lay two thin slices of kiwi against the side of each mould then carefully pour in the smoothie so that the kiwi shows up when un-moulded.
