We love the real deal doughnuts as much as the next person, but if your'e looking for an easy baking project with the kids which is a little lighter (and deep fat fryer danger free!) with some fibre and veg, this recipe is for you.
To make, stir the juice of half a lemon into 75ml milk until it begins to curdle. Whisk in an egg, 30g caster sugar and 2 tbsp maple syrup. Sift over 75g self raising wholemeal flour and 1 tsp cinnamon then gently fold in along with a large grated carrot and a generous handful of chopped walnuts. Divide between the holes of a silicone doughnut mould and bake at 200C for 10 minutes or until risen and golden. Allow to cool slightly and enjoy warm or cool completely and drizzle with a glaze made from icing sugar and orange juice.
